Easy crops for a school project

I have this school project about hydroponics and I want to show how it works in a simple, hands-on way. The idea is to set up a small demo that looks impressive but is easy to manage. I’m trying to figure out which crops grow quickly and reliably in a hydroponic system so I can show results without waiting too long.

Any suggestions for beginner-friendly plants that sprout fast and make a good demo? Thanks in advance!

I’ve tried hydroponics at home, and greens like kale and arugula are the easiest to start with. They sprout super fast and you can see them growing in just a few days. They’re tough too, so you don’t have to check on them all the time.
