Starting hydroponics with the kids

I’ve been gardening with my kids in soil for years, but we’re curious about trying hydroponics indoors.

Do hydroponic plants taste different, especially veggies like lettuce or tomatoes? I’d hate for the kids to think they taste bland. Also, are hydroponic systems safe and easy for kids to help with?

Living in a city apartment, hydroponics was my only option. Lettuce tastes the same, sometimes fresher since it’s harvested right away. My kids enjoy clipping leaves, it’s very hands-on but safe.
